Beginning with ingredients used by his Piemontese family in their home cooking and paired with his classical French culinary training, Chef-Owner Charles Drahi has developed a uniquely flavorful Contemporary Italian cuisine. The dishes offer the bright flavors of herbs, and sauces based on fruit and vegetable essences, as well as various roasting juices, without the heaviness of butter or cream reductions.
